Chicken and Rice Casserole

Ingredients:
  • 8 chicken thighs
  • 1 cup washed, uncooked rice
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup French onion soup
  • Paprika
Directions:
  1. Preheat oven to 325 degrees
  2. Pour all three cans of soup into a bowl and mix thoroughly
  3. Take 1/4 of soup mix and set aside in separate bowl.  With remaining 3/4 soup mix, add 1 cup of rice and mix thoroughly
  4. Grease a baking dish and fill with 3/4 soup mix.
  5. Place chicken thighs in dish
  6. Pour remaining 1/4 soup mixture on top of chicken thighs, sprinkle Paprika on top
  7. Bake for 1.5 hours, or until done

Greek Potato Salad

Ingredients:
  • 8 oz. Feta cheese
  • 2/3 cup of olive oil
  • 1 pound of red potatos
  • 1 bunch of green onions
  • 1 can of black olives
  • Salt and pepper
Directions:
  1. Cut potatos into cubes and boil cubes until slightly tender
  2. Lightly stir in oil into cubed potatos until all potato cubes are well coated
  3. Dice the green onions and olives
  4. Gently stir in Feta cheese, green onions, and olives
  5. Salt and pepper to taste
  6. Let chill in fridget for 45 minutes.  Server and enjoy!
